BREAKFAST 2 minute Blueberry Crumble - Claire Hodginss

- 1 cup blueberries (I used frozen)
- 1/2 tsp cornstarch
- 1/2 tsp lemon juice
- 1/3 cup oats
- 1 serving @promix vanilla whey protein powder
- 1/2 tsp cinnamon
- 1/2 tbsp honey or maple syrup
- pinch of salt
- 1-2 tbsp water

- Add the blueberries, cornstarch and lemon juice to a microwave safe bowl and stir together
- Microwave for 1 minute
- In a second bowl combine oats, protein powder, cinnamon, honey and salt. Add a splash of water at a time until you have a crumble texture.
- Add on top of the blueberries then microwave for 1 more minute.
- I like to add a tbsp of greek yogurt and a sprinkle of cinnamon on top. Enjoy!

Makes 1 serving: 359 cals, 30g protein, 54g carb, 4g fat
